Sweet & Spicy CABBAGE Salad
This slaw is all about contrast, the satisfying crunch of fresh red cabbage and carrots paired with the bright, aromatic pop of fresh dill. By using a quick marination technique, the cabbage develops a vibrant texture and a deeper, more cohesive flavor profile that make it a standout side dish.
Ingredients
Finely shredded red cabbage
Grated carrots
Chopped dill
A handful of dried raspberries (or raisins)
Jalapeño Sauce, Extra virgin olive oil, Balsamic vinegar, Fresh lime or lemon juice, a pinch of Salt
In your serving bowl, whisk together the olive oil, balsamic vinegar, lime/lemon juice, minced jalapeño, salt, and pepper until the dressing is silky and combined. Add the shredded red cabbage to the bowl. Toss thoroughly and let it sit for 20–30 minutes. Gently fold in the grated carrots, fresh dill, and your dried raspberries or raisins. Give everything one last mix. The colors will meld, and the ingredients will harmonize into a beautiful, ready-to-serve dish
Nutrition tip:
The secret to this salad is to whisk the dressing first, then add the shredded cabbage directly into the bowl. Letting the cabbage sit in the balsamic-oil mixture allows it to soften perfectly, turning a standard slaw into a much more tender and flavorful experience. The balsamic marination is a fantastic way to gently break down the fibers, making every bite feel lighter and easier to enjoy.
