To bring this salad together, start by tossing your cubed sweet potatoes with a spray of avocado oil and a pinch of salt, then air-fry them at 200°C (400°F) for 12–15 minutes until they are tender and golden-crisp around the edges. While those cook and cool slightly, combine your finely cubed Persian cucumbers, corn, green peas, and onion in a large mixing bowl, and whistle up your dressing separately by whisking together the olive oil, balsamic vinegar, salt, and black pepper in a small bowl. Next, gently fold the sweet potatoes and chopped fresh parsley into the vegetable mix. Finally, pour your prepared dressing over the top and give everything a final, gentle toss to evenly coat all the ingredients without mashing the potatoes.
