A colorful, satisfying meal that combines lean protein, crispy potatoes, and fresh vegetables into one nourishing bowl. It's high in protein, rich in fiber, and incredibly filling—making it a great option for lunch or dinner.

Ingredients

For the Crispy Potatoes

  • Cherry potatoes, cut into bite-sized cubes

  • Olive oil spray

  • Salt & Black pepper, to taste

  • 1 lb (450 g) 90% lean ground beef

  • 1 bell pepper, diced

  • Curry powder, to taste

  • 3–4 cups chopped lettuce & 3 chopped pickled cucumbers

  • 1 tomato & 1 shallot, thinly sliced

  • Freshly grated Parmesan cheese

  • Lime or lemon wedges, for serving

Optional: Serve with any of the homemade sauces from the Sauce Collection on the website.

  1. Bring a pot of water to a boil and cook the potatoes until just fork-tender. Drain well and allow them to cool slightly.

  2. Lightly spray the potatoes with olive oil, season with salt and black pepper, and air-fry until golden and crispy.

  3. Meanwhile, heat a skillet over medium-high heat and cook the lean ground beef until browned. Add the diced bell pepper, curry powder, salt, and black pepper, and continue cooking until the peppers are tender.

  4. In a large serving bowl, combine the chopped lettuce, tomatoes, and shallots.

  5. Top with the crispy potatoes and seasoned beef.

  6. Finish with freshly grated Parmesan cheese and a generous squeeze of fresh lime or lemon juice. If desired, drizzle with one of the homemade sauces from the Sauce Collection.

Although many Mexican-inspired salads include beans, I intentionally left them out in this version. The combination of potatoes as the carbohydrate source and lean ground beef as the protein source already creates a well-balanced meal, making additional starches or legumes unnecessary unless you enjoy them.
